Ingredients

  • 2 large eggplants
  • 4-6 slices of sausage
  • 2 tomatoes
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • Salt
  • Black pepper
  • chili pepper
  • Half a cup of grated cheddar cheese
  • Parsley (for serving)

Preparation

First, slice the eggplants in variegated ways and soak them in salted water. This process ensures that the bitterness of the eggplants comes out. After waiting for half an hour, take it out of the water and dry it. Place the eggplant slices on the baking tray and drizzle olive oil on them. Bake in a preheated 200 degree oven for about 20 minutes. Eggplants should soften slightly. Meanwhile, finely chop the onion and crush the garlic. Chop the tomatoes and peppers as well. Heat the olive oil in a large pan and add the onion and fry it until it turns pink. Then add the garlic and fry some more. Add the sausage slices and sauté until the sausages are golden brown. Then add the chopped tomatoes and peppers. Add salt, pepper and chili powder and mix. Cook for a few more minutes, remove from heat and set aside.

Spread the sausage mixture you prepared on the eggplant slices. Sprinkle grated cheddar cheese on top. Return the prepared eggplants to the oven and cook until the cheddar cheese melts. It may take about 10-15 minutes. Eggplants with sausage in the oven are ready to serve! You can sprinkle freshly chopped parsley on top and serve hot.
