Sausage Eggs with Potatoes in a Pan

Ingredients

  • 2-3 boiled potatoes
  • Aegean Sucukları Traditional Fermented Sausage
  • 1 red pepper
  • 1 green pepper
  • 1 onion
  • 3 eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 50 grams of mozzarella cheese (cheddar cheese can be used as an alternative)

Preparation

Peel the potatoes, cut them into cubes and boil them. Meanwhile, set the oven to 180 degrees. Put your pan on the stove, heat it well and lightly oil it. Dice the onion, red pepper, green pepper and sausage. Mix the ingredients well with a wooden spoon. Add the boiled potatoes to the mixture and cook with the potatoes for a few minutes. Mash the potatoes in the pan to create spaces for the eggs. Break the eggs into these cavities and sprinkle with mozzarella or cheddar cheese. Cover the pan with a baking lid or foil and bake in the oven for a few minutes. If you wish, you can sprinkle spring onions on top.

Preparation

Cut the tomatoes and peppers into cubes. Do not pour the juice from the tomatoes. Chop the sausage as you like. Put the pan on the stove and heat it well, then add the olive oil and butter. Add the peppers first, then the sausage and mix. Saute for a while and then add the tomatoes. After mixing the ingredients well, leave the mixture to cook over low heat. Meanwhile, you can start beating the eggs. Break the eggs into a deep bowl.

  • 200 grams Aegean Sucukları Traditional Fermented Sucuk
  • 1 red pepper
  • 2 green peppers
  • 1 bowl of grated cheddar cheese (mozzarella if desired)
  • 1 teaspoon thyme
  • A pinch of salt
  • 2 pieces of phyllo
  • Liquid Oil

Creation

Chop the red peppers, green peppers and sausage into small pieces. Grate the cheddar cheese.

Mix these ingredients in a bowl with thyme and salt. Spread the mixture on the wide edge of the quartered phyllo. Roll the phyllo into a roll. Beat the egg in a deep bowl and add a pinch of salt.   • 4 green peppers
  • 4 red peppers
  • 2 tomatoes
  • Salt and spices to taste

Creation

Wash the vegetables well, remove the seeds from the peppers and cut them into small pieces. Put the pan on the stove and let it heat up a little. Then add the vegetable oil. First add the peppers and cook until soft. Then add the sausages and sauté for a few minutes. Finally add the tomatoes and spices, stir. Stir and sauté all the ingredients for about 5 minutes, then remove the pan from the stove.
